VIDEO: Local Curds on the Lunch Tray

It's a special treat to get fresh cheese curds on the school menu. It means even more when they're from a local source, as was the recent case with an Apple Valley school, which sources from a local dairy in Bomgard. Minnesota is a proven leader when it comes to Farm to School policy, with 800 schools in 145 districts committing to serve at least some local products.

Award-winning school nutritionist Barbara Griffiths at ISD 196 in Apple Valley says the local food movement helps ensure better nutrition for schools, and IATP local foods director JoAnne Berkenkamp says farm to school policy drives more money into the local economy.
